Chef Justin B Heacock
Justin Heacock is our
son. He was home schooled throughout his youth which exposed him to a large
range of alternative diets and eating styles throughout the Untied States
long before anyone had ever heard of Wild
Oats. After graduating from the Learning Community, he briefly studied
culinary arts in New Orleans, Louisiana. Once there, Justin not only learned
the secrets of an amazing gumbo, but he also learned that he preferred apprenticing
with the locals to a formalized education. This led him to study with the
best in his hometown, Nashville, TN. Mentored by Margot McCormick of F.
Scott's and later joining her for the opening of Café
Margot where he further developed his craft and creativity with a menu
that changed daily. Today when Justin isn't cooking at the Hillwood Country
Club, he develops the menus and helps out in the kitchen at The Hill House
Writers Retreat; as our executive chef.
